The newest, grooviest low glycemic sweetener to hit the grocery shelves comes from coconuts!! I place it into the therapeutic category because it is low glycemic, which assists diabetics and those with metabolic syndrome in managing blood sugars. However, there is a warning with any carbohydrate containing "low glycemic" natural sweetener. Here's the rub... overdose on it, and it will, in fact, spike your blood sugars.
Glycemic Index indicates the speed at which carbohydrate containing foods and beverages enter your bloodstream. Since honey has a higher glycemic index than coconut sugar or agave (cactus), honey will spike your blood sugar the fastest of these three choices. The herb, stevia, contains zero carbohydrates. Therefore, stevia has a Glycemic Index and Glycemic Load of ZERO. In other words, no matter how much stevia you eat, it will not affect your blood sugars...EVER. These days, there are issues of how it is processed, as to how safe it is. The less processed the stevia, the more therapeutic. I've covered this topic in other blog posts, which I will repost in the near future.
Glycemic Load is the actual grams of carbohydrates you consume at the meal or snack. The more carbohydrate you take in, the greater the glycemic load will be.... which means, you are overdoing it ...no matter how low-glycemic. If you eat a pound of apples, they WILL SPIKE your blood sugars but, it will be a difficult task to achieve!!! The point is, a low glycemic food or beverage contains carbohydrates. Eat enough of them and you will raise your blood sugars, eventually. As with agave, xylitol and other carbohydrate containing natural sweeteners.... YOU MUST WATCH THE DOSE!!!
I've been attending the Natural Products Expo for over 20 years, and have never seen this particular coconut palm low glycemic sweetener I found the other day, at "fresh & easy" Neighborhood Market. "SWEET TREE Sustainable Sweeteners" ~ ORGANIC UNREFINED HIGH NUTRIENT BLONDE COCONUT PALM SUGAR ...which is exactly what it says on the label... in capitol letters!!! At roughly $4.50 for a 16 ounce package, it is not cheap but comparable to what you might pay for a small jar of agave or a really small package or container of stevia. The package also states coconut sugar is a "LOW GLYCEMIC INDEX SWEETENER" ...again... all in CAPS. "100% Pure Granulated Coconut Nectar ...from the Coco Nucifera Plant or Coconut Palm.
The packaging claims the coconut palm sugar is nutrient-rich, but does not mention any specific nutrients it is rich in... so, I've got some homework to do. So far, the only thing I've found on it's nutrient density, is the enzymes in coconut palm sugar are retained due to the low-heat processing methods. Although this particular coconut palm sugar claims to kettle boil the nectar from the coconut palm blossoms. You'd think they might burn up a few enzymes... if not all of them.
So, apparently, coconut palm sugar also contains amino acids which may help to manage the absorption of carbohydrates, making it low-glycemic. Nevertheless, I'm still searching for specific nutrients, micro-nutrients and minerals I can share with you... and as soon as I do, I'll edit this article to include that information. All I know, is this particular coconut palm sugar is produced in Southeast Asia. The package says this product is from Indonesia.
SweetTree is a registered trademark of Big Tree Farms and works to provide solutions for small palm sugar farmers through education, "microfinance" and transparent market access. Tropical palms are an ecologically beneficial tree crop that grow in diverse, wild-life supportive agro-ecosystems, restore damaged soils and require little water. The Food and Agriculture Organization (FAO) has reported that palm sugars are the single most sustainable sweetener in the world. So, I feel pretty good about this product.... just remember: MORE IS NOT BETTER

Simple Summer Veggie Recipes
Here's a recipe I'll share. I picked it up July 4th weekend in Oceanside, California at a little health food store on South Ocean Highway called, "Cream of the Crop" ~ which is what I am all about!
GRILLED NON GMO CORN with TOMATO OIL ~
Fresh corn ~ NON GMO, of course!!!!! ~ is one of my favorite vegetables... and being an A Blood Type, my body seems to like it. Corn is rich in magnesium, good for the heart, and rich in natural fibers to clean your colon and assist in balancing hormones, naturally, as fibrous vegetables do. Yes, corn IS glycemic, so you must mind your portion sizes!!! Corn will spike blood sugars. But, if you have enough protein with it, you'll be just fine.
Put 4 ears of corn on your grocery list, but LEAVE THE HUSKS ON for this recipe. You are going to cover the corn with flavored oil. If you don't like the flavor this recipe suggests, create an "oil rub" for vegetables using your favorite flavors. This recipe, from "Fire It Up" by Andrew Schloss and David Joachim suggests "Grilled Tomato Oil" on your ears of corn.
It takes about 30 minutes. This recipe calls for one cup of flavored oil you can use in a variety of recipes, beyond this one. Might as well make more, and save some for later.
In addition to the NON GMO corn in the husks, on your grocery list, add:
4 ripe plum tomatoes, halved
1/2 cup extra virgin olive oil (my suggestion: in a tinted glass container)
1 clove garlic, coarsely chopped
1 sprig of fresh oregano or thyme
1/2 teaspoon of honey (my suggestion: or try low glycemic agave syrup)
1/2 teaspoon of coarse salt (my suggestion: or try Himalayan sea salts)
1. Heat the grill... medium-high, direct heat at 425 degrees
2. In a small bowl, toss tomatoes with 1 T. oil.
3. Brush the grill grate and coat it with oil.
4. Grill tomatoes ....cut side - face down - 3-4 minutes
5. Flip 'n grill the other side... 3 more minutes
6. Throw into a food processor and then strain it with a fine mesh sieve
7. Keep the solids for another recipe... like pasta.... but the liquid portion goes directly into a saucepan with garlic, oregano or thyme... whatever spices you decided on...
8. Bring to a boil, and then down to a simmer for 10 minutes until 1/2 the liquid has evaporated
9. Remove from heat and strain liquid into a small glass container with a tight fitting lid. Add honey or sweetener, salt.... and stir until dissolved.
10. Let it cool and then whisk in the remaining olive oil.... keeps for 4 days.
So, once you have your seasoned oil... which you will use for a few different recipes... Keep the grill hot at 425 degrees. Grill the corn inside the husks, directly over heat ...turning them every 5 five minutes ...until the husks are blackened... 15-18 minutes ....the final 5-8 minutes, peel the corn husks back.... continue grilling until some of the kernels are browned and lightly charred.
Remove the corn from the grill.... let it cool, slightly, remove the husks... brush the ears generously with the tomato oil... or your favorite blend.

ROASTED NON GMO ZUCCHINI ~
OK.... the next therapeutic Summer recipe is super simplistic.... What could be easier than NON GMO zucchini? It's really tough to mess this vegetable up. It is rich in phyto-nutrition, antioxidants, fiber, trace minerals ...and they are delicious!!! This particular recipe is by Ellen Allard, the "Gluten-Free Diva"
On your therapeutic grocery list, add:
3 medium zucchini - sliced
1 Tablespoon of extra virgin olive oil
(my suggestion: in a tinted glass container
....or use the flavored oil you made for the corn)
1 Tablespoon of Kosher Salt (my suggestion: Himalayan sea salts)
Preheat your oven to 400 degrees.
Place the zucchini in a bowl and add the oil and salt. Toss it with your hands.
Place the zucchini on parchment paper... line a baking sheet with it.... Bake 10-15 minutes. Chill until ready to serve.

I intended to share these recipes on the air, today, in celebration of July 4th... but, my guest showed up. So, I promised to include them in my blog... but which one? Therapeutic Grocery List or Cuisious Cuisine??? I decided I would include in this one, because this food is medicine!!! You can enjoy these recipes all Summer long.

Cilantro as a Mercury DE-TOX? Only a peice of the puzzle...
I've been ingesting loads of cilantro for the past few months because I've heard it helps detox mercury. A couple of months ago, I had mercury based amalgams removed from my teeth. I was on Healthy People Radio this past week discussing cilantro ...as well as cumin, which I just blogged about, because I have been craving this spice like crazy. Anyways, I reviewed the therapeutic effects of both cilantro and cumin on my radio show, which is archived at http://ztalkradio.com/show-archives under the "Healthy People Radio" tab.
Nevertheless, nowhere in the sources I quoted on air, did I see anything written about cilantro as a detox for mercury or other metals. However, I knew it was helpful, and promised to follow up once I had done some research on line, for what I know to be true... yet, apparently, not very thoroughly written about.
Let's begin with a short review of what I mentioned on air ~ cilantro's more popular therapeutic benefits... Cilantro is a member of the Parsley family. Oh... and, Cilantro and Coriander are actually the same plant. Cilantro is the leaves. Coriander is the plant's seeds, often crushed into a powder.
Cilantro & Coriander:
1. loaded in potassium
2. relieve muscle cramps, aches or fatigue
3. support the nervous system
4. support mental acuity & memory
5. improve circulation
6. reduce blood sugars ...good for diabetics
7. support cardiac function
What I find interesting about cilantro and coriander is they help digest fats. But, adding cilantro to milk products, yogurt, sour cream, cheese, preserves the delicate omega-3 rich oils in the cilantro!!
But, here's what we did NOT talk about on the show.... how cilantro helps your body get rid of mercury. If you Google "mercury" and "cilantro" and "detox", you will be amazed at the number of sources citing it as helpful.
Below, I list one source, a protocol, called "Klinghardt Neurotoxin Elimination"
This protocol is approved by American Academy of Neural Therapy and Institute of Neurobiology (Bellevue, WA, USA) Institute for Neurobiologie (Stuttgart, Germany)
Academy for Balanced NeuroBiology Ltd (London, United Kingdom)

Cilantro (Chinese Parsley:)
"This kitchen herb is capable of mobilizing mercury, cadmium, lead and aluminum in both bones and the central nervous system. It is probably the only effective agent in mobilizing mercury stored in the intracellular space (attached to mitochondria, tubulin, liposomes etc) and in the nucleus of the cell (reversing DNA damage of mercury). Because cilantro mobilizes more toxins then it can carry out of the body, it may flood the connective tissue (where the nerves reside) with metals, that were previously stored in safer hiding places.
This process is called re-toxification. It can easily be avoided by simultaneously giving an intestinal toxin-absorbing agent. Our definite choice is the algal organism chlorella. A recent animal study demonstrated rapid removal of aluminum from the skeleton superior to any known other detox agent.
Dosage and application of cilantro tincture: give 2 drops 2 times per day in the beginning, taken just before a meal or 30 minutes after taking chlorella (cilantro causes the gallbladder to dump bile — containing the excreted neurotoxins — into the small intestine. The bile-release occurs naturally as we are eating and is much enhanced by cilantro. If no chlorella is taken, most neurotoxins are reabsorbed on the way down the small intestine by the abundant nerve endings of the enteric nervous system). Gradually increase dose to 10 drops 3 times/day for full benefit. During the initial phase of the detox cilantro should be given 1 week on, 2–3 weeks off.
Other ways of taking cilantro: rub 5 drops twice/day into ankles for mobilization of metals in all organs, joints and structures below the diaphragm, and into the wrists for organs, joints and structures above the diaphragm. The wrists have dense autonomic innervation (axonal uptake of cilantro) and are crossed by the main lymphatic channels (lymphatic uptake).
Cilantro tea: use 10 to 20 drops in cup of peice hot water. Sip slowly. Clears the brain quickly of many neurotoxins. Good for headaches and other acute symptoms (joint pains, angina, headache). Or, rub 10–15 drops into painful area. Often achieves almost instant pain relief."
Therefore, it appears I have been detoxing the mercury out but it may be distributing itself elsewhere in my body. This means I've got more work to do!!!! I've heard about taking bentonite clay when you detox with cilantro. And, this model talks about talking chlorella supplements with cilantro. No wonder I've been feeling a bit wonky!! I'll keep doing the research and keep you posted. Getting these metals out is most definitely a priority for ALL of us!!!!
Thankfully, I've got one of those ionic foot detox units. You can soak your feet to remove metals!!! So, I'd better start soaking my feet ASAP!!!! All this time I've been re-distributing mercury instead of getting rid of it!!! And, I just found out by doing the follow-up research for this blog post on cilantro ...so... I'd better get soaking.... and get some chlorella... and some bentonite clay???? Hmmmm....

Groovin' with Cumin!!
I'm among health practitioners who say if your body has a craving, it is missing something you need. Go with it. Honor your body. Honor your cravings. This is what I believe.
I've been craving cumin, lately. I've been sprinkling it onto my eggs, in my salads and pasta. In fact, I've been craving it so much, that I decided to do a show on it yesterday, on ZTalk Radio ~ http://ztalkradio.com/show-archives [Open: Healthy People Radio archives, 06/24/2011 ]. I was simply astounded by what I uncovered about cumin, in preparation. I consulted a few sources: The PDR [Physician's Desk Reference] for Herbal Medicines, Phyllis Balch's Prescription for Herbal Healing, and Dr. Cass Ingram's Supermarket Remedies ...and what I discovered deeply excited me... on many levels!!!
Cumin has a long history as a medicinal cure for liver, nervous system, digestion, brain chemistry, sexual potency, diabetes, hypoglycemia, skin tone... it is an anti-oxidant and has powerful anti-aging effects which are really exciting!!

Meet "the new one" ...pretty much the same as the old one :)
We all know, FOOD IS MEDICINE, which is why I launched a blog called [Rx] "Therapeutic Grocery Guide" a while back.
