Simple Summer Veggie Recipes

Summer Celebrates FREEDOM! Feel free to explore new recipes. Replace ingredients you are not crazy about, with those you ARE crazy about! After all, you are going out of your way to prepare your food. You might as well enjoy this "cream of the crop" cuisine as it heals you!

Here's a recipe I'll share. I picked it up July 4th weekend in Oceanside, California at a little health food store on South Ocean Highway called, "Cream of the Crop" ~ which is what I am all about!

GRILLED NON GMO CORN with TOMATO OIL ~

Fresh corn ~ NON GMO, of course!!!!! ~ is one of my favorite vegetables... and being an A Blood Type, my body seems to like it. Corn is rich in magnesium, good for the heart, and rich in natural fibers to clean your colon and assist in balancing hormones, naturally, as fibrous vegetables do. Yes, corn IS glycemic, so you must mind your portion sizes!!! Corn will spike blood sugars. But, if you have enough protein with it, you'll be just fine.

Put 4 ears of corn on your grocery list, but LEAVE THE HUSKS ON for this recipe. You are going to cover the corn with flavored oil. If you don't like the flavor this recipe suggests, create an "oil rub" for vegetables using your favorite flavors. This recipe, from "Fire It Up" by Andrew Schloss and David Joachim suggests "Grilled Tomato Oil" on your ears of corn.

It takes about 30 minutes. This recipe calls for one cup of flavored oil you can use in a variety of recipes, beyond this one. Might as well make more, and save some for later.

In addition to the NON GMO corn in the husks, on your grocery list, add:

4 ripe plum tomatoes, halved
1/2 cup extra virgin olive oil (my suggestion: in a tinted glass container)
1 clove garlic, coarsely chopped
1 sprig of fresh oregano or thyme
1/2 teaspoon of honey (my suggestion: or try low glycemic agave syrup)
1/2 teaspoon of coarse salt (my suggestion: or try Himalayan sea salts)

1. Heat the grill... medium-high, direct heat at 425 degrees
2. In a small bowl, toss tomatoes with 1 T. oil.
3. Brush the grill grate and coat it with oil.
4. Grill tomatoes ....cut side - face down - 3-4 minutes
5. Flip 'n grill the other side... 3 more minutes
6. Throw into a food processor and then strain it with a fine mesh sieve
7. Keep the solids for another recipe... like pasta.... but the liquid portion goes directly into a saucepan with garlic, oregano or thyme... whatever spices you decided on...
8. Bring to a boil, and then down to a simmer for 10 minutes until 1/2 the liquid has evaporated
9. Remove from heat and strain liquid into a small glass container with a tight fitting lid. Add honey or sweetener, salt.... and stir until dissolved.
10. Let it cool and then whisk in the remaining olive oil.... keeps for 4 days.

So, once you have your seasoned oil... which you will use for a few different recipes... Keep the grill hot at 425 degrees. Grill the corn inside the husks, directly over heat ...turning them every 5 five minutes ...until the husks are blackened... 15-18 minutes ....the final 5-8 minutes, peel the corn husks back.... continue grilling until some of the kernels are browned and lightly charred.

Remove the corn from the grill.... let it cool, slightly, remove the husks... brush the ears generously with the tomato oil... or your favorite blend.

ROASTED NON GMO ZUCCHINI ~

OK.... the next therapeutic Summer recipe is super simplistic.... What could be easier than NON GMO zucchini? It's really tough to mess this vegetable up. It is rich in phyto-nutrition, antioxidants, fiber, trace minerals ...and they are delicious!!! This particular recipe is by Ellen Allard, the "Gluten-Free Diva"

On your therapeutic grocery list, add:

3 medium zucchini - sliced
1 Tablespoon of extra virgin olive oil
(my suggestion: in a tinted glass container

....or use the flavored oil you made for the corn)
1 Tablespoon of Kosher Salt (my suggestion: Himalayan sea salts)

Preheat your oven to 400 degrees.
Place the zucchini in a bowl and add the oil and salt. Toss it with your hands.
Place the zucchini on parchment paper... line a baking sheet with it.... Bake 10-15 minutes. Chill until ready to serve.
